Costine Di Maiale Al Mosto DUva
Sardinian barbeque pork ribs drizzled with Sardinian honey and pollen reduction.
Servings: 4

Ingredients:
1/2 cup Mosto D’Uva
1 cup Extra Virgin Olive Oil
2 tablespoons rosemary, chopped
1 tablespoon garlic, chopped
2 pounds pork ribs
1 cup dry white wine
1/4 cup balsamic vinegar
1 tablespoon thyme, chopped
1/4 teaspoon crushed red pepper
Salt & pepper to taste

To Prepare:

  • Add ¼ cup of the Mosto D’Uva and white wine to a large saucepan over a medium heat, stirring until the Mosto D’Uva is dissolved. Allow mixture to cool and then add Extra Virgin Olive Oil , balsamic vinegar, rosemary, thyme, garlic, red pepper. Mix all ingredients together until well combined.
  • Cut the ribs into individual portions or leave as a whole rack. Brush marinade over the ribs and cover and refrigerate over night (at least 8 hours).
  • Heat grill to medium heat. Place ribs directly onto grill. Discard marinade. Grill the ribs for 20 minutes, turning once half way through the cooking. When the ribs are done, sprinkle with black pepper and drizzle with remaining Mosto D’Uva.
