Italian paesano bread topped with marinated tomatoes
Servings: 4
Ingredients:
5 roma tomatoes, seeded and chopped
4 tablespoons Extra Virgin Olive Oil
3 garlic cloves, finely chopped
4 sprigs of basil, chopped
1 pinch of dry oregano
Salt & pepper to taste
8 slices of hard crusted Italian bread
To Prepare:
- In a large bowl, combine tomatoes, extra virgin olive oil, garlic, basil, oregano. Salt & pepper to taste. Cover and refrigerate overnight (at least 8 hours).
- Grill or toast the slices of bread. Top bread with marinade tomato mixture.
- Serve immediately or for a special touch place under the broiler for 2 minutes.
- Finish with an extra drizzling of olive oil.
