Sardinian Music Bread with sweetened ricotta cheese
Servings: 4
Ingredients:
2 Whole Round Sheets of Pane Carasau
½ Pound of Fresh Ricotta Cheese
1 Lemon (juice and zest only)
1 Orange (juice and zest only)
3 Tablespoons of Bitter Honey
2 Cups of Mixed Berries (ie.strawberries,blueberries,raspberries)
1 Tablespoon of Sugar
To Prepare:
- Lightly toast the Pane Carasau. Break each sheet into 4 pieces.
- In a mixing bowl, gently mix ricotta cheese, half of the lemon zest, half of the orange zest and half of the bitter honey.
- In another mixing bowl, combine mixed berries and the lemon and orange juices. Stir in sugar until dissolved.
- Place the Pane Carasau pieces on a serving plate. Top with the ricotta cheese mixture. Add berries around the ricotta.
- Sprinkle with the remaining lemon and orange zest. Finish with a drizzling of bitter honey.
